
Apple-filled rastegai
Description
Perfectly pairs with tea and coffee. First, prepare the yeast dough. Let it rise. Divide into equal portions. Place apple filling on each portion of dough and shape into open-faced buns (rastegai). Bake the rastegai in the oven until done. Now, I'll explain and show you in more detail. Serve cooled or slightly warm.

Prepare the ingredients for the dough and filling. I used three large apples.

Take a deep, convenient container for the dough. Pour warm water into it and dissolve the yeast in the water. Also add sugar and salt, and dissolve them as well.

Beat the raw eggs and mix. Add the sifted wheat flour and knead the dough. To make the dough more pliable, you can add a couple of tablespoons of vegetable oil.

Knead the dough, cover it with a towel, and let it rise in a warm place. This may take 1–1.5 hours.

The dough should rise at least three times.

Peel the apples. Cut them into small pieces. Sprinkle with lemon juice, add sugar and cinnamon. Mix well. The filling is ready.

Divide the dough into 14 parts. Roll out each part as you would for dumplings. Place the filling in the center.

Carefully secure the edges on both sides, leaving the center open.

Place the open buns on greased baking sheets, leaving space between them, and let them rise. After 20 minutes, brush with beaten egg and put into the oven. Bake at 180 degrees for 20-25 minutes.
