Rasstegai with salmon

Description

Homemade baked goods for tea. Rasstegai can be served not only for breakfast or as a snack, but also with broths. Usually broth or butter is poured into the opening of a rasstegai. But salmon is a fatty fish on its own, so it does not need such an addition. Do not add all the flour to the liquid at once—flours vary, so you may need more or less. The dough should be soft and stick slightly to your hands; to make kneading easier, grease your hands with vegetable oil. The more you knead it, the denser it will become, and extra flour will only toughen the dough and make the pastry hard.

    Prepare all the ingredients you need to make salmon rasstegai.

    Add salt, sugar, and yeast to warm water and mix until smooth and even.

    Pour vegetable oil into a bowl, crack in an egg, and mix until smooth.

    Gradually, sifting the flour into the bowl, knead a soft, non-sticky dough. Knead the dough for at least 5–7 minutes. Grease the bowl with vegetable oil, shape the dough into a ball, and place it in the bowl.

    Cover the bowl of dough with a lid and put it in a warm place to rise for 40–60 minutes. The dough should double in size.

    Place finely chopped onion, finely diced salmon fillet, egg yolk, and chopped herbs in a bowl. Season with salt and pepper and mix everything together.

    Divide the dough into equal parts and roll into balls; cover with a napkin or towel and let stand for 10 minutes. Roll each ball into a flat round and spread the filling on top.

    Grease the baking sheet with vegetable oil. Lift the edges of the dough and shape pies with an open center — these are rasstegai. Cover the baking sheet with the rasstegai and leave in a warm place for 15–20 minutes until they rise.

    Brush the rastegais with egg or milk and bake in a hot oven at 180 degrees for 30 minutes. When the time is up, remove the baked rastegais, brush with vegetable oil, cover, and let rest for 10 minutes.
