Description

Perfect for serving with tea and coffee. I absolutely love rastegai because they remind me of genuine homemade baking, warmth, and comfort. You prepare them, set them on the table, and instantly your heart feels lighter—plus, they taste divine. That's why I often treat myself and my family to this wonderful dish, experimenting with different fillings each time. Today, I'll show you how to make rastegai with chicken. After fish, this is probably the most common filling, resulting in delicious, juicy pastries. With this excellent chicken rastegai recipe, you'll have another great reason to gather your family together or invite friends over—everyone will appreciate your cooking skills. Serve with tea or coffee.

So, let's start with the dough: gently heat the milk, dissolve the yeast in it, add sugar and two tablespoons of flour.

Now leave the sponge in a warm place for about an hour; during this time it will rise and start to bubble. Add eggs, salt, and the remaining flour to it, knead the dough, and finally work in the melted butter. Cover the finished dough with a cloth and place in a warm spot for 1.5–2 hours, kneading it 2–3 times during this period.

While our dough is rising, let's prepare the filling. First, boil the chicken breast in salted water until fully cooked, then cut it into small pieces.

We also boil the rice until fully cooked, drain it in a colander, and mix it with the sliced chicken. Add chopped onion, and season the filling with salt and pepper.

So, by this time our dough has risen, so we turn it out onto a floured surface, divide it into portions, and shape them into balls.

Roll each ball into a flat disc and place a little filling in the center.

Join the edges of the dough, leaving an opening on top, and shape into an open-faced pie.

    Step 8

Now grease a baking sheet with vegetable oil and place the open-faced buns on it. Brush them with egg yolk. Put the baking sheet into a preheated oven at 180-200 degrees Celsius. Since the filling is already cooked, bake the buns for about 10-15 minutes, until they develop a golden crust.

Serve the hot rastegai hot, placing a piece of butter into the opening.
