Perfect for stocking up for winter. Here is a very simple recipe for winter rassolnik in jars. You can, of course, buy it at the store, but homemade will be much tastier and more reliable. In winter it could not be easier! Want to make soup — take out the winter rassolnik from the jars and add it to meat broth with potatoes. That is it. Done. Peel the onion and slice into half-moons.

Wash the carrots, peel them, and grate.

Rinse the pearl barley thoroughly and cook until done.

Grate the cucumbers on a grater or cut them into cubes, whichever you prefer.

Mix the carrots, onion, cucumbers, salt, vegetable oil, tomato paste, and sugar. Cook for 40 minutes. Then add pearl barley, cook for another 5 minutes, and add vinegar.
