
Rahat lokum
Description
The dish is prepared without unnecessary complications. Rahat-lokum or lokum is a very delicious Eastern sweet. There are many varieties of lokum, with different ingredient compositions. Following this recipe, you will get an amazingly tasty and delicate, and most importantly, natural and dye-free rahat lokum. It can be enjoyed during fasting periods as it contains no gelatin. Prepare it with pleasure. The ready dessert can be served at the table.

Prepare the necessary ingredients.

Prepare the syrup. In a heavy-bottomed saucepan, mix 100 ml of water, 100 ml of strawberry (or raspberry) syrup, and 1.5 cups of sugar. Place over medium heat and cook, stirring occasionally, until the sugar dissolves.

Mix the starch with icy water, stir thoroughly and place over low heat. Cook until thickened, stirring occasionally. Once the starch has thickened into a dense mass, remove it from the heat.

When the syrup comes to a boil, remove the foam and reduce the heat to a minimum.

Boil the syrup until it reaches 130 degrees. If you don't have a thermometer, test the syrup for the "hard ball" stage. Drop a bit of syrup into icy water, remove the candy drop from the water; the syrup should form a firm ball.

Now pour the syrup into the starch mixture, stirring thoroughly with a whisk to avoid lumps. Simmer this thick sweet jelly over low heat for 20–30 minutes until thickened, stirring constantly. Add nuts to taste, if desired.

Let the mixture cool slightly, then pour it into molds lined with plastic wrap, smoothing the surface. Leave uncovered in the refrigerator overnight.

The next day, dust the work surface with a mixture of powdered sugar and starch. Place the Turkish delight on it.
