
Italian-style pork stew
Description
Any cut of pork can be used for the stew, but cooking time may vary depending on the meat's quality. If you prefer more vegetables, feel free to increase their quantity. Don't worry about the wine—alcohol evaporates during cooking, leaving behind a pleasant, mild aftertaste. Moreover, wine makes the meat more tender and soft. However, avoid wines with strong aromas, such as "Isabella," as they might overpower the dish's overall flavor. This stew is best served with fried white bread, garlic, and fresh herbs.

Prepare all the necessary ingredients for making Italian-style pork stew.

Make cross-shaped cuts on the tomato skins. Pour boiling water over them and let sit for 5 minutes. Drain the hot water and pour cold water over the tomatoes. Remove the tomatoes and peel off the skin. Chop half into pieces, and puree the rest.

Pour vegetable oil into a frying pan. Cut the onion into pieces, grate the carrot on a coarse grater, and add to the pan.

Cut the celery stalks into pieces and place them in the pan with the vegetables.

Sauté for 10 minutes over low heat. Then set aside half of the vegetables onto a plate and cover with a lid.

Add 100 milliliters of water, season with salt, and simmer over low heat for 40 minutes, stirring occasionally.

Add the chopped tomatoes, herbs, and Italian spices, mix and simmer for another 5 minutes. Add the reserved vegetables, heat through for another 2-3 minutes, then remove from heat.
