
Pork and zucchini stew
Description
The recipe won't take much time. Cooking stew in a multicooker is very simple and enjoyable. To prepare pork stew with zucchini, you will need: meat, vegetables (you can use frozen Mexican mix of corn and green beans), juicy tomatoes, lean pork, and zucchini. By the way, I recommend using, for example, two zucchinis and one courgette—they create a very pleasant flavor. See the recipe below. Serve hot.

Wash and chop the vegetables. If the tomatoes are large, cut them into quarters. Cut the zucchini into quarters as well. If you're using a frozen vegetable mix with peas and corn, you don't need to thaw it—just add it directly to the stew later.

Cut the pork into small cubes. Turn on the multicooker and set it to the "Frying" mode. Fry the pork for about 5 minutes in oil until golden brown.

Dice the onion finely and chop the garlic.

Add to the meat and sauté in the same mode until the onion turns golden. Season with salt and pepper.

Then pour in a glass of broth. Switch the mode to "Stewing" or "Baking." Cook for about 10 minutes, then add the vegetables.

Simmer for a minimum of 40 minutes, up to an hour, until the pork is cooked through. Add coriander and other spices 5–10 minutes before the end.

Let the ready pork and zucchini stew rest, covered, for another 10 minutes before serving. Serve with rice.
