
Ratatouille with chickpeas and pumpkin
Description
The recipe won't take much time. Traditionally, this stew is served with a side of boiled rice, bulgur, or couscous. Be sure to add aromatic spices: coriander, cinnamon, and cumin. Cook the chickpeas beforehand or use canned ones. Give it a try—it's delicious! Serve hot.

1. Peel the sweet pumpkin, slice it into small pieces, then cut into cubes.

2. Peel and slice the carrots into half-rings, cut the sweet potato into small pieces, and dice the onion. Mince the garlic.

3. Boil chickpeas in advance or use canned ones. Soak raisins in boiling water and let sit for 10 minutes, then drain the water.

4. Heat a tablespoon of vegetable oil in a saucepan, add the onion, then after 5 minutes add the garlic, ginger, and all the spices. After 1 minute, add the carrots, potatoes, pumpkin, chopped tomatoes, chickpeas, raisins, and pour in the broth. Simmer over low heat for 40 minutes after boiling. Add spinach leaves and cook for a few more minutes.

5. Serve the stew with boiled rice, cilantro, and lime.
