
Pork stew with eggplants
Description
The dish is prepared without unnecessary complications. It's very tasty, aromatic, and filling! You can replace pork with chicken or beef; however, if using beef, the dish will need to be cooked a bit longer. First, stew the meat until fully cooked, and only then add it to the vegetables. Serve the dish hot.

Cut the pork into medium cubes and fry with the onion until golden brown.

Add eggplants cut into cubes of the same size as the meat. Fry until lightly browned.

Add pepper and reduce the heat. Fry for 3-4 minutes.

Place the tomatoes cut into large cubes and the chopped celery into the pot. Add coarsely chopped garlic, season with salt and pepper. Simmer the dish over low heat for 15–20 minutes, stirring occasionally, so that the stew doesn't turn into mush.

Serve immediately, sprinkled with herbs and accompanied by soft bread.
