
Pork stew in the style of perkalta

We will cook using a multicooker. Cut fresh pork fat into small cubes. Slice the onion into thin strips. Fry the fat until crispy on the "frying" setting. Add the onion and brown well.

Remove the onion with cracklings onto a plate and sauté the cubed meat in the multicooker. Do not add fat, sauté as is.

Add the fried onion to the meat and add the carrot cut into thick strips. Fry together for 5 minutes.

Add the sweet pepper cut into strips and the peeled and halved garlic cloves, and fry for another 5 minutes.

Sprinkle the meat with paprika and heat until the fat turns red. Pour in the wine and simmer uncovered for 10 minutes. Add blended tomatoes in their own juice, including the liquid. Season with salt, pepper, and a pinch of sugar. Cook for 20 minutes in simmering mode. Then sprinkle the stew with cumin and thyme, mix well, and switch to warming mode for half an hour. This will give the sauce a pleasant thickness and smoothness.
