
Seafood stew
Description
The recipe won't take much time. Instead of the specified seafood, you can use a ready-made seafood mix. My shrimp are boiled and frozen, so they only need to be warmed through. If you have raw shrimp, add them together with the squid. Serve hot.

Prepare the ingredients.

In a heavy-bottomed skillet, heat olive oil with a sprig of rosemary and a clove of garlic, crushed with the knife and left in its skin.

Place the leek, sliced into rounds, in the pan. Sauté for a couple of minutes, stirring.

Add the celery and bell pepper, and fry for another 3 minutes.

Remove the garlic and rosemary. Add the fish fillet cubes and cook for 3 minutes, stirring.

Add the cherry halves and sauté for another minute.

Pour in the wine and tomato passata. You can substitute it with high-quality tomato paste or thick tomato juice. Simmer for a couple of minutes.

Add the squid, season with salt. Simmer for two minutes, stirring and making sure the squid are covered with sauce.

Add the shrimp to the stew. Stir a couple of times and turn off the heat. Let it stand for 5 minutes.

Season the stew with freshly ground black pepper and garnish with parsley.
