
Chicken stew with beetroot

Cut the chicken carcass into small portion pieces.

In a saucepan, heat the olive oil with curry for just 1-2 minutes.

Dice the tomatoes, beetroot, and shallot finely.

Sear chicken pieces in olive oil with curry until browned—about 5–7 minutes over high heat. Then add sliced mushrooms and onion to the chicken. Sauté for 3 minutes.

Then add the beet to the stew and simmer over medium heat for 7 minutes.

Next, add tomatoes and garlic to the stew. Simmer for another 5 minutes.

Reduce the heat to almost minimum, pour in half a cup of boiled water, simmer for a couple of minutes, then add the cream, season with salt, stir, and simmer for another 3–4 minutes. Ready! Serve immediately.
