Rabbit stew
Description
The dish is prepared without unnecessary complications. You can cook rabbit stew at home with any vegetables, not only those specified in this version. It's important to choose the right cookware—a heavy-bottomed sauté pan—and simmer the stew over low heat. The white wine gives the dish a special delicate aroma, while the alcohol evaporates during the long cooking process. The finished dish can be served at the table.

Step 1

1. First, prepare the rabbit. Wash it, thoroughly dry with a paper towel, and cut into small portion-sized pieces.

Step 2

2. Place a small piece of butter in a saucepan and melt it. Meanwhile, season the meat pieces with salt and pepper and coat them in flour. Transfer them to the saucepan and sear over high heat until a crust forms. This simple rabbit stew recipe can also be enhanced with spicy seasonings, if the dish is not intended for children.

Step 4

4. Add the diced potatoes and rabbit to the sautéed vegetables. Pour in the wine, season with salt and pepper to taste. Add a pinch of nutmeg and some chopped fresh herbs. Pour in water until the vegetables are covered, then bring to a boil. Reduce the heat to the lowest setting, cover with a lid, and simmer for at least 1 hour.

Step 5

5. When the home-cooked rabbit stew is ready, you can remove it from the heat, but leave it covered for another 30-45 minutes. The meat turns out wonderfully tender, and the sauce perfectly complements the flavor of the vegetables and rabbit.
