
Stewed Gizzards with Eggplants

Prepare all the ingredients.

Rinse the chicken gizzards, clean them, and cut into medium pieces.

Sauté chicken gizzards for 10 minutes in a saucepan with oil, stirring occasionally. Then add a little water (150 grams) and simmer the gizzards for 30–40 minutes until tender.

Peel the eggplants and slice them into half-rings. Sprinkle with salt and let stand for 10 minutes to remove bitterness.

Peel the potatoes and cut them into medium slices.

Add potatoes and eggplants to the gizzards, mix, season with salt to taste, and simmer for 10-15 minutes.
