
Argentine-style beef stew in pumpkin

Wash and dry the pumpkin. Then cut off the top and remove the seeds and fibrous pulp from the pumpkin.

Pour milk into the pumpkin, add a pinch of salt and sugar, and peppercorns.

Cover with the pumpkin lid and wrap the pumpkin in foil. Then place it on a baking sheet with a small amount of water. Put the pumpkin in a preheated oven at 150 degrees for 20-30 minutes.

Meanwhile, prepare all the ingredients for the Argentine stew. Add the corn to boiling salted water and cook for about 5 minutes.

In the same water in which the corn was boiled, we will cook the rice until al dente, it should be slightly firm.

Cut the beef into small pieces.

Cut the pumpkin (300 g) into pieces of the same size.

Peel the potatoes, sweet potatoes, and carrots, then cut them into small pieces.

Slice the white part of the leek into thin rings, and finely chop the green onion.

Heat vegetable oil with bay leaf and garlic.

Mix and after 10-15 minutes, season with salt and pepper to taste. Then add carrots, pumpkin, sweet potato, potatoes, and dried peach cut into small pieces.

Next, add paprika, chili flakes, oregano, and tomato sauce (or tomatoes in their own juice blended in a blender).
