
Lamb stew with potatoes

The dish is prepared without unnecessary complications. There's no better dinner option than a stew, as we cook the meat together with vegetables right away, resulting in something not only delicious but also very filling. There are many ways to prepare it, and I'll share my favorite simple recipe for lamb stew with potatoes. It has a bit of Irish, Ukrainian, and Belarusian cuisine, plus a few touches of my own—basically, a little bit of everything. The final result is an excellent mix of flavorful, juicy lamb, potatoes, and vegetables—this dish looks absolutely amazing and smells even better. So head to the store for meat and vegetables, and start cooking lamb and potato stew at home, because treating yourself and your loved ones to a tasty dinner is always a pleasure. Step 1

First, rinse the lamb and dry it on a paper towel. Cut the meat into small pieces, season with salt and pepper, and sprinkle with Worcestershire sauce. Place the meat in a pan with heated oil and sear until a golden crust forms. Then transfer the meat to a heatproof dish, such as a casserole pot.

Place the chopped scallions into the skillet in which the meat was fried, and sauté until translucent.

Add the sliced carrots, garlic slices, diced celery, thyme, and rosemary; season the vegetables with salt and pepper, and simmer for a few more minutes.

Place the vegetables in the pot on top of the meat, add juniper berries and prunes, and mix the top layer.

It remains only to add the potato, cut into large pieces, mix everything again, and pour beer (or broth) over the vegetables and meat. Cover the casserole dish with a lid and place it in a preheated oven. Cook the stew for 2-2.5 hours at 160-180 degrees.
