
Fluffy syrniki with rice flour baked in the oven

The recipe does not take much time. The syrniki turn out delicate and tasty! I really like this method of preparing them — delicious, simple, wholesome, and quick. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients you need for making syrniki. Use the driest farmer’s cheese (or drained cottage cheese) you can—then the cooked syrniki will have a tighter texture and you’ll need less flour.

In a suitable bowl, put the cottage cheese, add sugar and salt. Mash the mixture with a fork until smooth.

Beat in the chicken eggs and stir thoroughly once more.

Add rice flour, baking powder, and vanilla. Mix the cottage cheese mixture thoroughly.

With lightly damp hands, form round balls and place them on a baking sheet lined with parchment. Bake in a preheated oven at 190°C for 20 minutes.
