
Fluffy pancakes made with whey
Description
Pancakes are a very popular breakfast dish, and they are easy to make and cook faster than crepes. To make fluffy pancakes using whey, you can buy ready-made whey at the store (luckily, it's not hard to find nowadays). However, if your milk has soured, you can use this homemade whey instead. I usually set aside part of it to make homemade cottage cheese, and use the leftover whey for pancakes. Serve them cooled or slightly warm.

Sift the flour into a deep container. Sifted flour becomes enriched with oxygen, and as a result, the baked goods turn out even more delicious.

Add sugar, salt, and baking soda. Do not neutralize the baking soda—whey is acidic, it will neutralize it.

Then pour in the whey. First, only half of it.

Knead a not too thick dough, gradually adding the remaining whey.

The dough should have the consistency of thin sour cream.

Add oil to a preheated skillet (you don't need much, but the skillet should be well greased). Pour one tablespoon of batter at a time and cook on both sides.
