Fluffy Fried Kefir Pirozhki with Yeast

Description

The recipe won’t take much time. The filling for these pirozhki can be very varied: minced meat, vegetables, mushrooms, rice, eggs, or jam. The dough is universal and goes with everything. The pirozhki turn out tender, airy, and of course very tasty! You can not only fry them but also bake them—it will be even healthier. What’s more, the dough from this recipe doesn’t go stale quickly; the next day you only need to reheat the pirozhki in the microwave and they’ll be soft and tasty again. A wonderful recipe—give it a try.

    Prepare all the ingredients.

    In a deep bowl, combine 1 tbsp sugar, 1 tbsp flour, and yeast.

    Add warm water, stir, and let stand for 15 minutes.

    Add room-temperature kefir, egg, salt, and vegetable oil.

    Mix and add the sifted flour in portions. You may need a little more or less flour than the recipe states. Keep adding flour until the mixture becomes difficult to stir with a spoon.

    Then transfer the dough to a floured work surface and continue kneading by hand. Yeast dough responds well to hands, so knead it for at least 15 minutes. Gather the dough into a ball, return it to the bowl, cover with a towel, and leave in a warm place for 2 hours.

    The dough should rise to almost double its size.

    Once the dough has risen, punch it down and let it rise again.

    Start shaping the pirozhki.

    Divide the dough into equal pieces. The size depends on how large you want the pirozhki to be. My pieces are about 70 grams each.

    Roll each piece into a thin round and place the filling in the center. I’m using mashed potatoes and sausages.

    Pinch the edges closed, place the pastries seam side down, and let them rest for about 5–7 minutes. I got 16 pieces.

    Heat a frying pan with vegetable oil. Place the pies in the pan and fry until golden brown on both sides.
