Fluffy cinnamon buns
Description
Delicious baked goods for the whole family. Preparation: bring the milk to a boil in a small saucepan and melt the butter in it. Yeast dough: thoroughly mix the flour with the yeast in a bowl. Add the other ingredients (except 1 egg yolk and 2 Tbsp milk) and the butter‑milk mixture, stir with a mixer on low speed, then on the highest speed beat the mixture for 5 minutes until a uniform yeast dough forms. Cover the dough and place it in a warm spot to rise (at least 30 min). Line a baking sheet with parchment paper. Knead the dough on a lightly floured work surface and roll it out into two rectangles (each 35 × 24 cm). Beat the egg yolk with the milk. Brush the dough with a thin layer of the yolk‑milk mixture. Sprinkle the dough with sugar and cinnamon, then roll it tightly into a log. Cut the logs into 2‑cm‑wide slices, place them on the baking sheet and let them rise for 20 minutes. Preheat the oven to 160 °C. Brush the buns with the remaining yolk‑milk mixture. Put the baking sheet in the oven on the middle rack. Baking time: 15 minutes at 160 °C, then let the buns cool on a kitchen rack. Can be served with tea or coffee.
