Description

Homemade baked goods for tea. For the buns, you need rich and thick kefir or sour cream. If you don't have it on hand, you can increase the number of eggs—add 2 eggs to the dough. Reserve one yolk for brushing the buns; this will give them a beautiful golden color and help the sesame seeds stick. The amount of flour is approximate and depends on the type, moisture, and quality; the main thing is that the dough should be soft, elastic, not overworked, and not sticky to the hands. Too much flour may make the buns hard. I use homemade baking powder based on baking soda—2 tsp is enough. If desired, you can replace it with 1 tsp of baking soda. If you're using natural fermented kefir (self-fermented), there's no need to neutralize the soda—the acids in the kefir will do the job. The baking is ready. Serve at the table.

    In a bowl, combine egg white or a whole egg if small, with salt, sugar, and warm kefir.

    Knead a soft dough. Turn on the oven to 180 degrees and let it heat up well.

    Roll out the dough to a thickness of 5-6 mm, cut into small rectangles, make a slit in the center of each, and pull one end through the slit.

    Grease the baking sheet with oil or line it with parchment paper, place the buns a small distance apart. Brush them with egg yolk (I add 1 tsp of water to make the yolk thinner), sprinkle with sesame seeds. Bake in a preheated oven for 25 minutes.
