
Persimmon pudding
Description
Pudding with persimmon flesh and cinnamon is a true autumn dessert. It's delicious served with a scoop of vanilla ice cream.

1. Preheat the oven to 175 degrees. Lightly grease a baking dish with oil and set aside. To prepare the pudding, mix the persimmon pulp with sugar in a large bowl. Set aside. If the persimmon is slightly firm, it's better to blend the pulp in a blender.

2. Whisk eggs and baking soda in a small bowl. Add the egg mixture to the persimmon mixture and beat. Mix flour, salt, baking powder, and cinnamon in a large bowl.

3. Add 1/4 buttermilk to the persimmon mixture.

4. Add 1/4 of the flour mixture and mix well. Continue adding flour and buttermilk alternately in 1/4 portions, mixing well after each addition.

5. Add the cream, honey, clarified butter, and mix thoroughly until smooth. Pour the resulting batter into the prepared pan.

6. Bake the pudding in a preheated oven for about 1 hour. When the pudding is ready, turn off the heat and leave the pudding in the oven.

7. 10 minutes before the pudding is done, prepare the sauce. Bring water to a boil in a small saucepan. Whisk together sugar and flour, then add the mixture to the boiling water and whisk with a whisk. Cook the sauce for 5 minutes, remove from heat, and stir in vanilla extract.

8. Pour the prepared sauce evenly over the pudding and place in a warm oven for 20 minutes.
