
Onion and Bread Pudding
Description
This recipe is quite versatile – you can additionally add Parmesan cheese and roasted vegetables to it.

1. Cut leeks into thick slices. Finely chop green onions. Grate the cheese. Heat a skillet over high heat and add the leeks. Season with salt and cook until the leeks begin to soften, about 5 minutes, then reduce the heat to medium. Stir in the butter. Cover with a lid and cook, stirring occasionally, until the leeks are very soft, about 20 minutes. Add salt and pepper to taste.

2. Preheat the oven to 175 degrees. While the leek is cooking, spread the bread cubes on a baking sheet and bake until lightly golden, about 15–20 minutes. Place the bread in a large bowl.

3. Add leek, green onion, and thyme to the bowl with bread, mix well. In another large bowl, lightly beat the egg and egg yolk, then whisk in milk or cream, a pinch of salt, pepper to taste, and a pinch of nutmeg.

4. Sprinkle 2 tablespoons of grated cheese into a greased baking dish. Place half of the bread mixture into the dish and sprinkle with another 2 tablespoons of cheese. Add the remaining bread mixture and sprinkle with an additional 1/4 cup of cheese. Pour enough milk mixture to cover the top, gently pressing down on the bread. Let it stand for 15 minutes. Add the remaining milk mixture and sprinkle with salt.

5. Bake until the pudding turns brown, about 55-65 minutes. Serve hot or cold, cut into slices.
