
Brown rice pudding with strawberries
Description
Brown rice contains many minerals (manganese, iron, magnesium, etc.), B vitamins, and other nutrients. Brown rice positively affects the digestive system, reduces cholesterol levels, and helps prevent blood clot formation. If you plan to serve this pudding as a dessert rather than for breakfast, double the amount of sugar and honey in the recipe.

Step 1

1. Rinse the brown rice. Bring 4 cups of water to a boil over high heat. Add the rice and salt, reduce the heat to medium, and cook, partially covered, for 30 minutes. Drain the rice in a colander, return it to the pot, and turn off the heat. Cover the pot tightly with a lid and let it stand for 10 minutes.

2. Add milk, sugar, honey, and vanilla bean to the saucepan with rice. (If using vanilla extract, add it just before serving the pudding.) Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Cook until the milk has reduced and the rice becomes creamy, about 30 minutes.

3. If you are using vanilla extract, stir it into the pudding at this point. If you plan to serve the pudding warm, serve it now. If you intend to serve the pudding cold, transfer it to a serving dish and chill. Garnish the pudding with strawberries before serving.
