Boil the cauliflower until tender, then mash it into a puree. Cook the spaghetti until al dente and cool it under cold water.

In a large bowl, mix the spaghetti, cauliflower puree, grated cheese, starch, flour, and a pinch of salt.

Heat a large frying pan with vegetable oil. Divide the mixture in the bowl into 6 portions. Place a portion of the mixture in the shape of a bird's nest (with an empty space in the center).

Sear on one side for 2-3 minutes until golden brown, then carefully flip the nest and crack a chicken egg into the center, sprinkle with salt, cover with a lid, and cook for 2-3 minutes.
