
Millet pancakes with kefir
Description
The bake is easy and quick to make. I must say this simple and wonderful dish was a revelation for me. For this you can use millet porridge left over from lunch or dinner. But the pancakes are so good that I cooked the porridge specially for them. Give them a try—you won’t regret it. They go well with tea or coffee.

Prepare the ingredients for making millet pancakes.

Cook millet porridge. To do this, sort the groats if needed. Then rinse them thoroughly and add them to a pot of boiling water. The water-to-millet ratio is 3:1. Salt lightly and cook the millet for 20–25 minutes over low heat, stirring, until it is fully broken down into porridge. Let the porridge cool slightly and transfer it to a bowl.

Add the egg, kefir, salt, and sugar.

Add the baking soda and sifted flour.

Mix all ingredients to make millet pancakes. The batter should not be too thick, but not runny either.

Spoon the batter onto a hot skillet with refined sunflower oil.

Pan-fry the millet pancakes on both sides until golden brown.

Fluffy, golden-brown and tasty millet kefir pancakes are ready. You can serve them at the table with sour cream, jam, and honey.
