
Wheat pretzel
Description
Homemade baked goods for tea. Dough made with wheat sourdough starter is very healthy, so it's perfect for everyday bread baking. Thanks to its unusual and attractive shape, this ring-shaped loaf can even be served at festive tables, especially if decorated with sunflower seeds, cumin, or sesame. The ingredients listed in the recipe yield two loaves. Don't worry—they won't last until the next day, they'll disappear in no time :) The loaf resembles the sun not only in shape but also in color: turmeric gives it a golden hue. Serve with tea or coffee.

1. Prepare the starter: mix water with the starter culture, stir well. Add flour and mix again thoroughly. Cover with plastic wrap and let sit at room temperature for 8 hours.

2. Place the sponge into the bowl of a mixer, add water, sugar, salt, vegetable oil, sifted flour, and semolina. Mix the ingredients at speed 1 for 1 minute, then add turmeric and cumin. Knead the dough in the mixer at speed 2 for 4 minutes.

3. Shape the dough into a ball and place it in a bowl greased with vegetable oil. Cover with plastic wrap and let rest at room temperature for 3–4 hours. After an hour and a half, degas the dough by lifting it from one edge, stretching it as much as possible, and folding it over to the opposite side of the bowl.

4. Repeat stretching in a circle, then flip the dough, smooth its surface, and leave it covered with film until the end of proofing. Place the dough onto a floured work surface, round it up, and divide into 2 parts.

5. Roll each piece into a ball, cover with plastic wrap, and let rest at room temperature for 10 minutes. Evenly sprinkle oat bran or sesame seeds onto parchment paper. Place one piece of dough onto the bran and flatten it into a thick circle.

6. Make three diagonal cuts, stopping short of the edges of the dough. Turn the resulting inner corners of the triangles inside out and place them on top of the dough. Shake off excess bran from the parchment, cover with plastic wrap, and let rest for 1.5 hours.

7. Similarly, make the second braid. Bake in a preheated oven at 200 degrees for 30 minutes. Cool the braids on a wire rack.
