Prepare the ingredients.

Mix the flour, salt, and dry yeast.

Make a well in the flour and pour water at 27 °C into it.

Knead the dough. It's best to do this with a plastic dough scraper, using circular motions. Rinse the bowl for proofing the dough, coat the surface with a small amount of vegetable oil so that nothing hinders the dough as it rises. Cover the dough with plastic wrap and place it in a warm spot for 40 minutes.

After 40 minutes, perform a dough kneading using the “stretch and fold” method, i.e., take the dough, stretch it outward, fold it over, and stretch it again. After another 40 minutes, do another such stretch-and-fold and place it back in a warm spot for 20–25 minutes.

Prepare a baking sheet, line it with parchment paper or a silicone mat, and lightly dust it with flour.

Divide the dough into 2 parts, flatten into a sheet, roll the ends toward the center, cover with plastic wrap for 10 minutes.

Form the baguette, rolling it gradually, pinching each new turn.

You can do this by a “strike” with the edge of the palm.

Pinch the final turn well, stretch the baguette along the length of the baking sheet. Place them on the “seam” spaced apart from each other.

Lift the parchment paper between the baguettes, forming a sort of rim, and place a rolled‑up napkin on the sides.

Cover the baguettes with a damp cloth and let them proof for another 40 minutes.

Place a container with water on the lower rack of the oven and preheat the oven.

With a sharp knife make cuts on the baguettes. Bake in the oven at 250 °C without convection and for another 15 minutes with convection.
