
Wheat enriched squares
Description
Delicious baked goods for the whole family. To add variety to your first course or afternoon snack, simply prepare a new type of bread. In this recipe, instead of traditional loaf-shaped bread, make small squares from enriched wheat dough. This baked treat turns out very nutritious, as it requires the use of wheat or rye sourdough starter. It's most convenient to bake this bread on a baking sheet, cutting the dough into small portion-sized squares. You can decorate the baked goods with sesame seeds, cumin, or sunflower seeds. Serve cooled or slightly warm.

1. Prepare the starter: place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let sit at room temperature for 8 hours.

2. Place the starter into the bowl of a mixer, dilute it with water, and add the eggs. Add salt, sugar, and all the sifted flour. Mix for three minutes at speed 1 in the mixer. Increase the mixer speed and add the melted butter.

3. Continue kneading for another 3 minutes. Place the dough into a bowl greased with vegetable oil and cover with plastic wrap. Let it sit at room temperature for 30 minutes.

4. Five times every 30 minutes, stretch the dough with wet hands: take the dough by one edge and fold it toward the opposite edge. Repeat around the entire circumference of the dough, cover it with plastic wrap, and let it rest for 30 minutes.

5. Turn the dough over and carefully place it on a baking sheet lined with parchment paper. Stretch the dough to fit the entire baking sheet using hands coated with oil. Cut the dough into squares and make several small slits on each one.

6. Sprinkle the dough with sesame seeds. Bake in a preheated oven at 200 degrees for 45 minutes. Let the bread cool completely on the baking sheet.
