
Spicy Indian chickpeas
Description
This is one of those dishes that tastes even better the next day. Serve the spicy chickpeas with Indian wheat naan bread. Optionally, you can add yogurt, cherry tomatoes, cilantro, some onion, and garnish with lemon wedges.

1. Finely chop the onion, and mince the garlic and ginger. Heat vegetable oil in a large skillet. Add the chopped onion, garlic, and ginger. Sauté until soft and lightly golden, for 5 to 6 minutes. In a small bowl, mix together cinnamon, garam masala, cumin, cloves, cayenne pepper, and salt.

2. Add to the onion mixture and cook, stirring, for 1 to 2 minutes.

3. Add tomato paste and cook for a few more minutes. The mixture should be dark red in color.

4. Add the lamb peas and 1 cup of the reserved liquid from the can. Stir to combine the chickpeas with the sauce. Cover and cook over medium heat for 10 minutes. Remove the lid during the last few minutes of cooking.

5. Remove the pan from heat and let it stand for 1 minute so that the lamb peas absorb all the spice flavors. Season with salt to taste. Serve the dish hot or cold.
