
Spiced cupcakes with icing

This recipe will yield 2 dozen cupcakes. The warm aroma of spices and tea will warm you up on a cold autumn evening.

Step 1

1. Preheat the oven to 175 degrees. Line the baking pan with paper liners. In a medium bowl, mix together flour, baking soda, baking powder, salt, cinnamon, cardamom, ginger, nutmeg, and cloves.

2. In a small saucepan, bring the milk to a boil. Remove from heat and add the tea bags. Let it stand for 10 minutes. Remove the tea bags and cool the milk to room temperature.

3. In a large bowl, beat the butter and sugar together. Add the eggs, one at a time, and beat well. Add the applesauce and mix. Add 1/3 of the flour mixture to the batter and mix. Add 1/2 of the milk mixture and beat at low speed. Add another 1/3 of the flour and mix. Add the remaining milk and mix. Finally, add the remaining flour and mix.

4. Fill each paper liner with 2 tablespoons of batter and bake for 14–16 minutes. Let cool completely. To make the frosting, beat the butter in a bowl. Add 1 cup of powdered sugar and beat until combined. Then add another cup of powdered sugar and beat, mixing in the vanilla extract. Add cinnamon and mix thoroughly. Gradually add the remaining powdered sugar, 1 cup at a time, beating until smooth. If the frosting is too thick, add 2 tablespoons of milk. Frost the cooled cupcakes. Sprinkle with cinnamon if desired.
