Prepare the necessary ingredients. For the "dry spices," take 1 tablespoon of a ground spice mixture: cinnamon, cardamom, ginger, allspice, nutmeg, and cloves, in a ratio of 2:1:1:1:1:1/3.

In a saucepan (2 l volume), combine honey, sugar, "dry spirits," and orange juice, and bring to a boil.

Add the butter, stir, then add the baking powder, stir the foam, and remove from heat.

Add half of the flour, mix until smooth. Add the egg yolk, mix well.

Add the remaining flour gradually. You may need slightly less of it. The warm dough should be soft, pliable, and not sticky to the hands. Let it cool, cover with plastic wrap, and refrigerate for 3 hours, preferably overnight. During this time, the dough will better absorb the blend of spices and aromatics.

Divide the dough into four parts and roll out each on parchment paper into a thin sheet about 0.5 cm thick. Cut out cookies using cookie cutters or a paper stencil. For this New Year, I had previously cut out dog shapes. If you want to hang the cookies on the Christmas tree, make a small hole using a cocktail straw. Bake the cookies in a preheated oven at 180°C for 10–12 minutes.

For the glaze, mix egg white with powdered sugar (200 g). Place the glaze into a piping bag or a plastic bag. Cut off a very small tip of the bag with scissors.

Apply the glaze to the cookies and let them dry. Store the Christmas spiced cookies in a tightly sealed container.
