Step 1

1. Prepare the ingredients for gingerbread. Use any type of honey: floral, sunflower, buckwheat, etc. Since these gingerbreads were intended for children, there are no spices included. You can add a mixture of ground cinnamon, nutmeg, cloves, and vanilla. Alternatively, buy a ready-made spice mix for gingerbread.

Step 2

2. Melt butter with honey and sugar in a double boiler. Whisk the mixture until smooth and uniform.

Step 3

3. Without removing from the double boiler, add the egg and part of the flour, along with the baking powder. Mix well.

Step 4

4. Remove the dough from the bain-marie and add the remaining flour. Knead the dough, but not for too long, and avoid adding more flour than necessary. Once the dough stops sticking to your hands, it's ready. You may use between 3 to 3.5 cups of flour.

Step 5

5. Divide the dough into 12 portions. Roll each into a ball. If your steamer allows, place all at once; I cooked mine in two batches. Pour 500 ml of water into the multicooker pot, select the "Steam" mode and set the time for 25 minutes. Place the steaming basket and close the lid. Start the process. Remember that any baked goods expand in size, so place the gingerbread cookies at a distance from each other.
