
Gingerbread cookies with kefir (simple recipe)
Description
The baking is simple and quick. Gingerbread can be made with fillings, for example, jam, or with cocoa for chocolate gingerbread. If you have a gingerbread mold, you can make "stamped" gingerbread, or simply cut out or shape them by hand. In any case, such gingerbread makes a wonderful treat to serve with tea, milk, or coffee.

Place all ingredients on the work surface.

Prepare the gingerbread dough. Into a large bowl, first crack one whole egg. Very carefully add the yolk from the second egg, separating the egg white into a separate small bowl (it will be needed for the glaze).

In a bowl, add sugar and honey to two egg yolks.

Beat these ingredients with a mixer until the mixture lightens in color.

Add vegetable oil and kefir.

Sift the flour with the soda.

Knead a soft dough that does not stick to your hands. If necessary, add a little more flour at a time to achieve the desired dough consistency.

Line a baking sheet with parchment paper. Separate the dough into small portions weighing 40 grams each and roll them into balls. Place these ball-shaped portions onto the baking sheet, slightly flattening them with your fingers to shape them into familiar gingerbread cookies. Bake the cookies in a preheated oven at 180°C for 20 minutes.

Now quickly prepare the glaze. Put the egg white from a chicken egg into a separate bowl and add powdered sugar.

Vigorously mix these ingredients with a whisk until you obtain a smooth, white, fairly thick glaze.

Now dip each hot gingerbread into the glaze and place it on a rack to let the excess drip off. The glaze on the gingerbread sets very quickly.
