Instructions

Step 1

Place honey and spices into a metal bowl. Cinnamon, nutmeg, ginger, and cloves work well. Add a pinch of salt and some grated orange zest. Set the bowl over a water bath and gently heat the honey, but do not bring it to a boil. Remove the zest and cloves from the honey.

Step 2

Put the butter into the honey, wait until it melts, and mix both ingredients. Then add the raw chicken egg, pour in the flour, and knead the dough.

Step 3

It is very important to knead the dough thoroughly. You should literally "beat" it on the work surface. Knead the dough for at least twenty minutes. It should become very pliable, like plasticine. Wrap the dough in plastic wrap and leave it in the refrigerator for two days.

Step 4

After two days, take the dough out of the refrigerator and remove the plastic wrap. Let it warm up slightly at room temperature. Then shape the dough into small flatbreads and fill them with raisins and pieces of marzipan. Shape into cookies and place them on a baking sheet. Bake at 180 degrees Celsius for about 20 minutes.
