
Protein cupcakes
Description
When mixing the dough, use ingredients at room temperature. Take the products out of the refrigerator ahead of time. Cupcake batter should not be mixed for too long; it is enough to combine the components and whisk them together. You can serve with tea or coffee.

To make the cupcakes, prepare the ingredients. If you don’t have oat flour on hand, you can grind rolled oats in a coffee grinder and sift them through a sieve.

In a bowl, combine the eggs and kefir, then whisk the mixture with a whisk.

Combine the rice and oat flour, add the baking powder, and sift through a sieve. Add the sugar substitute.

Combine the liquid ingredients with the dry ingredients. Melt the coconut oil in the microwave for 30 seconds, let it cool, then pour it into the batter.

Mix the dough with a whisk so the ingredients are evenly distributed and there are no unmixed spots.

Prepare baking molds. Divide the batter among them, filling the molds three-quarters full. This amount of ingredients makes five cupcakes. Bake the cupcakes in an oven preheated to 170°C for 20 minutes.

While the cupcakes are baking, prepare the filling. You can use any berry or fruit purée for it. This recipe uses strawberry purée.

Mix the berry purée, sugar substitute, and cornstarch in a saucepan. Place over heat and, stirring constantly, cook until the mixture thickens. Remove from the heat and cool.

To make the cream, use lower-fat ingredients. Soft cottage cheese can be replaced with regular grainy cottage cheese after rubbing it through a sieve.

In the milk, stir in the sugar substitute, nonfat dry milk, and cornstarch.

Heat the milk mixture over medium heat, whisking constantly, until it thickens. Remove from the heat and cover the mixture with plastic wrap pressed directly onto the surface. Cool.

Add soft cottage cheese and cream cheese to the cooled milk mixture. Whisk the cream with a whisk until smooth. The cream will be smooth and glossy.
