Prepare the dough. In a small container, combine dry yeast, warm water, sugar, salt, and a little flour. Mix thoroughly and let stand for 10 minutes to allow the yeast to activate.

Step 2
Meanwhile, sift the flour, mix with sugar and salt, then pour in the yeast mixture and thoroughly stir with a wooden spoon. Add the olive oil and knead the dough until it becomes elastic.

Step 3
Roll the dough into a ball, dust with flour, and cover with a towel. Let the dough rest at room temperature for 1 hour, during which it will rise and double in size.

Step 4
Let's prepare the filling. For this, boil the potatoes in their skins and peel them. Once the potatoes have cooled down, cut them into small cubes.

Step 5
We wash the mushrooms under water and slice them thinly. We peel the onion and garlic and finely chop them as well. Heat a frying pan, add a small amount of olive oil, and sauté the onion, garlic, and mushrooms. Cook until all the liquid has evaporated. Mix the potatoes and mushrooms, then season with salt and pepper to taste.
