
Simple eclairs
Description
Making eclairs is actually quite simple; you just need to prepare the dough properly and make a delicious cream. You can use buttercream as a filling—it also turns out very tasty. Be sure to add the eggs to the cooled dough while preparing it, otherwise the dough will curdle. Also, do not open the oven door during baking, or the eclairs will collapse and won't turn out light and airy. Now you're sure to end up with the most delicious and beautiful eclairs. The pastry is ready. Serve at the table.

1. Prepare the cream: mix the egg yolks with sugar, vanilla, and flour, stirring well. Add a teaspoon of milk if necessary. Add hot milk and mix.

2. Place the cream over heat, bring to a boil, and simmer over medium heat until thickened, stirring constantly. Add butter to the hot cream and let it cool, covering it with plastic wrap.

3. Prepare the dough: mix milk with butter, salt, and sugar, and bring to a boil. Over medium heat, add flour and stir constantly to form a ball of dough.

4. Remove the dough from the heat and let it cool slightly. Gradually add the lightly beaten eggs in parts, mixing until smooth. The dough should become very elastic.

5. Using a pastry bag, pipe eclairs 5-6 cm long onto a baking sheet lined with parchment paper, leaving space between them.

6. Place in a preheated oven at 200 degrees for 10 minutes, then reduce the temperature to 180 degrees and bake for another 15-20 minutes until golden brown. Do not open the oven door.

7. Let the eclairs cool, then fill them with cream using a piping bag through the small holes previously made on top of the eclairs. Decorate the eclairs with powdered sugar icing and melted chocolate. Sprinkle with nuts, sprinkles, and coconut flakes.
