
Simple recipe for cottage cheese paskha

Few of today's homemakers prepare cottage cheese paskha for the festive Easter table, considering its preparation troublesome. But that's not true at all—paskha is very easy to make. My simple recipe for cottage cheese paskha will convince you of this. When you mix all the ingredients, the mixture will be quite liquid—don't let that frighten you. After pressing under a weight, everything will turn out just right. Adjust the taste of the cottage cheese mixture to your preference.

Cut the apricots into small pieces and pour boiling water over them together with the raisins for about 10 minutes. Then drain the water and squeeze the dried fruits.

If your cottage cheese has large lumps, it's better to pass it through a sieve or a meat grinder. Place the cottage cheese in a bowl, add soft butter, regular sugar, and vanilla sugar. Mix thoroughly until smooth and uniform.

Add sour cream and dried fruits.

And again mix thoroughly.

Assemble the special Easter mold and line it with cheesecloth folded in two layers. If you don't have a mold, you can use any other container, but it must have holes in the bottom.

We place the cottage cheese mixture.

Fold the edges of the cheesecloth. Place the paskha mold on a colander. Put a small plate on top, and place a weight on the plate. Refrigerate for about 10–12 hours.

We transfer the ready-made paska onto a plate, remove the mold and the gauze. This is what my paska looks like. It can be decorated with sprinkles or chocolate.
