
Simple recipe for kefir pancakes
Description
The baking is simple and quick. You can make kefir pancakes with or without yeast, with or without eggs, adding green onions, bananas, apples, pumpkin, or cabbage. Instead of wheat flour, you can use oat flour or cooled semolina porridge, and you can bake the pancakes in the oven instead of frying in oil. Instead of kefir, you can use any other fermented milk product. There are plenty of variations. But I'll tell you how I do it. They can be served with tea or coffee.

In a large bowl, beat the eggs with sugar and vanilla.

Slightly warm the kefir and pour it into the egg mixture.

Add the melted butter and mix.

In a separate bowl, mix the flour with baking soda, baking powder, and salt.

Add the dry ingredients to the bowl with the kefir mixture, quickly mix everything together, and let the pancake batter rest for 5–7 minutes. The batter should be thick and have a consistency similar to thick sour cream.

Heat a skillet with vegetable oil over medium heat, then place the batter by the tablespoon, leaving some space between each pancake.

Reduce the heat to low and cook the pancakes until golden brown, then flip them over and cook for a few more minutes on the other side until golden brown as well.

Serve the pancakes hot with sour cream, honey, jam, or simply dusted with powdered sugar.
