
Simple lemon pie recipe

Grate the zest of two lemons, avoiding the white pith, as it adds bitterness, which we don't want in our pie.

Add the yolks and sugar to a container and beat until the mixture turns pale.

Add sour cream, butter, and half of the zest to the mixture, and whisk lightly.

Add the flour and baking powder to the dough in portions, knead thoroughly until smooth.

Line a baking sheet with parchment paper, place half of the dough on it, and spread it into a square or rectangle shape.

Bake in a preheated oven at 180 degrees for about 25 minutes. Bake the second half of the dough in exactly the same way. When the cakes have completely cooled, cut each cake in half horizontally, resulting in 4 cake layers.

In the bowl of a mixer, combine the sugar and the remaining lemon zest.

Soak each cake layer with lemon filling. Stack the layers on top of each other.
