
Simple apricot pie
Description
The baking is simple and quick. This easy apricot pie is probably the best addition to tea in summer, when the fruits are at their most nutritious and delicious. The pie turns out tender and moist thanks to the apricots, which release their juice while baking. Besides apricots, you can use peaches, nectarines, or plums—each will make a very tasty pie. I also recommend trying this pie with added cinnamon for a wonderful aroma. Serve it cooled or slightly warm.

1. Beat the room-temperature eggs with sugar for two minutes. Add sour cream and beat for another half minute. Sift the flour together with baking soda, salt, and baking powder, then mix.

2. Combine both mixtures and add orange zest. Mix until smooth and pour into a baking pan lined with parchment paper.

3. Place the apricot halves on top of the dough, cut side up, and sprinkle with sugar. Bake the tart in a preheated oven at 190 degrees for 40 minutes.
