
Simple meat pie with potatoes
Description
You can prepare this simple meat and potato pie according to the recipe either as a main dish or as a pastry for tea or when hosting guests. The pie looks impressive and disappears completely, down to the last piece. Today I made mine with duck, but you can easily substitute any meat you have on hand. Although the dough is yeast-based, it's effortless to prepare, and all the required ingredients are always readily available. This delicious, mouthwatering, golden-brown pie is a perfect reason to gather your loved ones around the table. Serve it warm or cooled—it's ideal with tea.

Prepare all the ingredients from the list.

In a deep bowl, combine flour, sugar, salt, and yeast.

Pour in the warm milk.

Mix and add the butter.

Knead by hand into a soft, slightly sticky dough. Shape into a ball, brush with oil, cover the bowl with a towel, and let it rise in a warm place until doubled in volume.

While the dough is rising, prepare the filling. Cut the meat into small cubes and place on a heated pan with oil.

Sear over high heat until partially cooked. The exact time will depend on the size of the pieces and the type of meat you are using.

Transfer the prepared meat to a deep bowl. Add the diced potatoes. I prefer to blanch the potatoes beforehand by immersing them in boiling water for 5–7 minutes, then plunging them into ice water and draining in a sieve or colander. Blanching potatoes for the pie is not mandatory—it depends on the potato variety and the size of the pieces.

Add finely diced onion, salt, and spices to taste to the filling. You can use any spices you prefer; I add cumin, coriander, ground pepper, and a meat seasoning blend.

While preparing the filling, the dough has risen.

The risen dough needs to be punched down and divided into two unequal parts, one should be slightly larger than the other.

Roll out the larger part of the dough and place it into a greased pan, forming high edges.

Place the filling (reserve the juice from the filling in the cup, you'll need it a little later).

Cover the filling with the second rolled piece of dough and seal the edges using any method convenient for you.

Brush the top with vegetable oil and make a round hole in the center.

Place the pie in a preheated oven at 180°C for 30 minutes. Then remove the pie and pour the remaining filling juice into the hole. Bake for another 30 minutes or so. Check the pie's doneness through the hole—potatoes should be soft. If the top browns too much while the filling is still undercooked, cover the pie with foil.

The simple meat and potato pie is ready. Cover it with a towel and let it stand for about 30 minutes, then cut into portions and serve. I slice off the top of the pie like a lid and serve it in individual bowls. It's very aromatic, juicy, and delicious.
