
Simple honey cake

Put a glass of sugar, honey, and butter into a saucepan. Place the pan over heat and constantly stir until smooth and the sugar has dissolved. Then add the baking soda and set aside to cool.

In a separate container, beat the eggs with a whisk.

Add the eggs beaten until homogeneous to the slightly cooled honey mixture.

Carefully add the sifted flour in several batches, constantly stirring to prevent lumps from forming.

The dough consistency should be stretchy and slightly runny. It should resemble medium-fat sour cream.

On parchment paper, trace your dish with a pencil and carefully spread a thin layer of dough with a spoon. Bake the layers for 3 minutes at 160 degrees.

While the cake layers are baking, mix the sugar, vanilla, and sour cream for the frosting using a mixer. I recommend using a mixer with dough attachments—this significantly reduces the risk of overbeating the sour cream into butter.
