
Simple kvass
Description
Homemade kvass turns out less sweet than store-bought, so you can add more sugar if desired. The flavor is rich, and the drink itself is refreshing. To give the kvass an interesting note, add a handful of raisins. Serve chilled.

Step 1
If your bread is fresh, slice it and dry it in the oven. You can also use stale or dry bread.

In a large jar, pour hot water, add sugar and bread. Let the water cool slightly. When the water becomes warm, add liquid honey and stir until dissolved.

Cover the jar with a kitchen towel or gauze (never with a lid) and leave it in a warm, bright place for 48 hours.

Shake the jar slightly once a day. After 48 hours, strain the liquid through cheesecloth or a sieve and pour it into bottles. The kvass can be stored in the refrigerator for no more than 10 days.
