
Simple raisin cake
Description
Delicious baked treat for the whole family. This cake will become a frequent guest at your table. You can bake it in small molds or one large one. The key is to generously use raisins and powdered sugar—then your dessert will turn out perfect. In addition to raisins, feel free to try other dried fruits such as apricots, prunes, and more. Serve cooled or slightly warm.

1. Take the butter out of the refrigerator in advance so it becomes soft. Place it in a bowl, add sugar, rub together, then add the eggs one at a time, beating until smooth and creamy.

2. Wash the raisins, then pour boiling water over them and let them steep for 10–15 minutes. Drain through a sieve and squeeze out excess moisture. Add the prepared raisins to the butter and egg yolks. Mix in the previously sifted flour, baking soda, and salt. Stir thoroughly. The dough will be thick.

3. Line a baking pan with parchment paper and pour the batter into it. Bake the cake in a preheated oven at 160 degrees Celsius for 60-80 minutes. Remove the finished cake from the oven and sprinkle with powdered sugar.
