
Simple Italian country pie
Description
Preparing this pie will take you no more than 1 hour, making it an ideal treat when guests are already at the door. You can make this pie not only with apples, but also with tart-sweet pears, slightly firm plums, peaches, nectarines, or apricots. Be sure to sprinkle the apples with cinnamon and sugar—this mixture creates a beautiful, crispy crust on the pie. Serve warm or chilled. Perfect with tea.

1. Line the bottom of the pan with parchment paper. Grease the sides with a thin layer of butter and attach strips of paper. Peel the apples and slice them into wedges about half a centimeter thick.

2. Sift the flour together with the baking powder and salt. Beat the room-temperature eggs with sugar and vanilla sugar at high speed in a mixer for 5–7 minutes. Add the melted, cooled butter and mix well.

3. Combine the egg mixture with the lemon zest and flour mixture, gently stirring with a spatula. Spread the batter over the bottom of the pan, place the apple slices on top, lightly pressing them into the batter. Mix cinnamon with sugar and sprinkle over the pie.

4. Bake in a preheated oven at 170 degrees for 45–50 minutes. Let the cake cool in the pan for 15 minutes, then remove and cool completely.
