
Simple sponge roll with pear
Description
Delicious pastry for the whole family. For preparing such a dessert, soft ripe pears are ideal, as they will slightly moisten the dough, making the rolling process easier. When using firmer fruits, they should be grated on a coarse grater before baking. Serve cooled or slightly warm.

Prepare the listed ingredients. When determining the required amount of pears, keep in mind that after removing the cores their weight should be 500–600 grams.

Break the eggs into a deep bowl and whisk with a mixer or a whisk, adding the granulated sugar in batches.

As a result of beating, the egg mixture should become airy and lighten, and the sugar should dissolve completely.

Combine the flour with the baking powder and place it in a sieve, then gradually add it to the eggs beaten with sugar, gently mixing the mixture with a spatula or spoon from bottom to top.

Set aside the finished sponge cake batter while you prepare the fruit filling.

Wash the pears, remove the cores, then cut them into irregular small pieces, place them on a baking sheet lined with parchment paper or a special mat, and sprinkle with cinnamon.

Spread the sponge cake batter over the layer of pears. It’s convenient to do this with a silicone spatula.

Bake the pear sponge cake in a preheated oven at 170‑180 °C for 25‑30 minutes.

Let the future roll cool slightly, then carefully flip it using a large cutting board onto a sheet of parchment paper. The layer of pears will then be on top.
