
Simple apricot jam without pits

So for everyone who has lived all this time without such a magnificent treat, I offer my recipe for pitted apricot jam. Making this dessert, by the way, is quite easy—even novice preservers will manage without trouble—yet how much joy such jam will bring you on chilly autumn and winter evenings. You can eat it in the morning with tea or coffee, and during the day bake fragrant buns with it—in short, there’s always a use for something this tasty. So I recommend absolutely everyone make pitted apricot jam at home; then you’ll understand how delicious homemade preserves can be. Store in a cool, dark place.

So, to start, we pick slightly greenish, firm apricots and rinse them thoroughly under cold water.

Cut each berry in half and remove the pit.

Sprinkle the peeled apricots with half of all the sugar and set them aside for now in a cool place. Mix the remaining sugar with water, place the mixture on the heat, and boil a sugar syrup from these ingredients. Pour the hot syrup over the apricots and leave them like this for 24 hours.

The next day, place the container with apricots over low heat and boil the jam for one hour after it comes to the boil. Don’t forget to stir it and skim off the foam that forms on the surface.

Pour the fragrant hot jam into sterilized jars and seal them. In winter, open them as needed and enjoy the amazing taste of our jam.
