Description
The recipe won't take much time. The sponge cake batter yields the simplest and most delicious cake layers. You can bake them separately or prepare one large sponge cake layer and then cut it into portions. This doesn't matter much for making the cake. To make a simple sponge cake batter for a cake, always use plenty of eggs—five is still not the limit. Sponge cake layers absorb any cream or syrup very well, making them perfect for cakes. Serve warm or chilled. Ideal with tea.

Beat the eggs and mix with sugar.

Beat with a mixer until a white foam forms—beat for about 10 minutes.

Then sift the flour and add a pinch of vanilla extract. Gently add the flour to the eggs to prevent them from deflating.

Mix the sponge cake batter with a mixer at low speed.

Grease the baking pan with butter.

Pour the batter into a mold (it will be quite liquid) and place in a preheated oven at 180°C. Bake for the first 10 minutes, then reduce the temperature to 160°C and continue baking for another 25 minutes, until done.
